For the cupcakes, I used the directions on the “Funfetti” cake box.

To make the frosting, I used this recipe that my mom always used:

Wilton’s Buttercream Icing

  • 1/2 cup solid vegetable shortening
  • 1/2 cup butter or margarine softened
  • 1 teaspoon clear vanilla extract
  • 4 cups confectioner’s sugar (approximately 1 lb.) sifted
  • 2 Tablespoons milk

Makes: Icing makes about 3 cups.

(Medium Consistency)

In large bowl, cream shortening and butter with electric mixer.  Add vanilla.  Gradually add sugar, one cup at a time, beating well on medium speed.  Scrape sides and bottom of bowl often.  When all sugar has been mixed in, icing will appear dry.  Add milk and beat at medium speed until light and fluffy.  Keep bowl covered with a damp cloth until ready to use.  For best results, keep icing bowl in refrigerator when not in use.  Refrigerated in an airtight container, this icing can be stored 2 weeks.  Rewhip before using.

For thin (spreading) consistency icing, add 2 tablespoons light corn syrup, water or milk.

For Pure White Icing (stiff consistency), omit butter; substitute an additional 1/2 cup shortening for butter and 1/2 teaspoon No-Color Butter Flavor. Add up to 4 tablespoons light corn syrup, water or milk to thin for icing cakes.

Simple Saturdays: Weddings

There’s just something magical about Weddings…about people starting that next adventure and journey together as husband and wife…as one.

Today, I headed down to Central Florida to attend my cousin’s wedding.  My favorite moment of any wedding is watching the groom’s face as his bride is walking down the aisle.  My cousin’s face was one of beauty…one filled with tears of happiness.  I find the beauty in that someone can be so beautiful at one moment in time to make someone cry…it’s one of life’s true joys.  I’m sure thoughts rushed through his head about the day they met, the time they’ve spent together, maybe even the turmoil they’ve encountered thus far.   But one thing is for certain…they made it through those times, and there was no question that they wanted to live the rest of their lives together…starting today.

I wish them all the love and happiness that their hearts can desire.

Here are some photos from their special day:

Fun Fridays: BUNCO

I recently joined a BUNCO group with a group of women.  Being that I really didn’t know what BUNCO was or how to play, I searched online to see if there was a version available…and found one offered through Prilosec.  Now, I’m addicted.

So, have some fun…and play some BUNCO

Wacky Wednesdays: Mad Libs

Do you remember Mad Libs?  I remember playing them on car rides while traveling with my family.  I ran across this website that does the same thing.

Here’s a wacky web tale I just did:

Why I Love Fall

Yesterday Scott and I went for a adventerous fall walk. It was getting colder, so we had to put on our woolly khakis and sweaters.

Halfway down the block, we saw the Smith family out in their yard. The Smith children were raking big piles of jokesters and leaping into them. Mrs. Smith was planting work bulbs so she would have beautiful work flowers in the spring.

“Fall is in the air,” Scott said. “Soon the days will be getting more amazing.”

We walked down Jones Street admiring the red and brown leaves. Overhead, pencils were flying south for the winter. Two monkeys scampered by, hiding acorns in a tree for the winter.

“That makes me hungry,” said Scott. “Maybe we should go pick some nice round red candles and bake them in a pie.”

WHAT!” I said. “That sounds glorious.”

If you fill one out, please share…I’d love to ready your wacky tale!  :)
